Korean Bulgogi Skewers
Built around beef sirloin and soy sauce -- the method starts by soaking wooden skewers in water 20 minutes.

Smoke, char, and a sticky glaze -- everything good about cooking over fire. Here it's built on beef sirloin, soy sauce and brown sugar -- a medium, BBQ recipe that starts by soaking wooden skewers in water 20 minutes, and is ready in roughly 50 minutes.
Worth the 50 minutes -- this is a weekend project that pays off.
A few technique steps to focus on, but nothing that needs special equipment.
Built around beef sirloin, so the flavor comes from real ingredients, not a spice packet.
Ingredients
- 1 1/2 lb (680 g) beef sirloin, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 3 cloves garlic, minced

- 1/2 pear or apple, grated
- 1 tbsp toasted sesame seeds, sliced scallions, skewers

Method
Soak wooden skewers in water 20 minutes.
Mix the soy sauce, brown sugar, sesame oil, garlic, ginger, and grated pear into a marinade (the pear naturally tenderizes the beef).
Toss the thin beef slices in the marinade and leave 30 minutes.
Thread the beef onto skewers in loose ribbons so they cook quickly and evenly.
Heat the grill or grill pan to high.
Grill 2-3 minutes per side until caramelized at the edges - the sugar chars fast, so watch closely.
Scatter with sesame seeds and scallions and serve.
The step worth not rushing: Mix the soy sauce, brown sugar, sesame oil, garlic, ginger, and grated pear into a marinade (the pear naturally tenderizes the beef).
