- 2 lb meat for grilling
- 3 tbsp dry rub
- 2 tbsp olive oil
- 3 cloves garlic
- 2 tbsp brown sugar
- 1/4 cup BBQ sauce
- Salt and pepper
- Wood chips, optional
Method

Coat the meat in the rub and let it come to room temperature.

Set up the grill for two-zone heat and sear over the hot side.

Move to indirect heat, basting with sauce, until cooked to your liking.
