Method
Soak wooden skewers in water 20 minutes.
Mix the garlic, olive oil, lemon zest, chili flakes, salt, and pepper. Toss the shrimp in it and marinate 15 minutes (no longer, or the lemon starts to cook them).
Thread the shrimp onto skewers, pushing through both the head and tail end so they hold flat.
Heat the grill or grill pan to high.
Grill 2 minutes per side until pink, opaque, and lightly charred. They cook fast, so stay close.
Squeeze over the lemon juice and scatter with parsley.
