Method
Take the chops out of the fridge 20 minutes before cooking and pat them dry.
Mix the oil, garlic, paprika, brown sugar, salt, and pepper and rub all over the chops.
Heat a grill or grill pan to medium-high.
Grill the chops 4-5 minutes on the first side without moving them, so a crust forms.
Flip and cook 3-4 minutes more, until the inside reaches 145F/63C (a blush of pink is fine and keeps them juicy).
Stand the chops on their fatty edge for 1 minute to crisp the fat.
Rest 5 minutes, then serve with lemon wedges.
