  • 4 tbsp butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 lemon, halved
  • 2 tbsp olive oil
  • Salt and black pepper

Method

Take the turkey out of the fridge 30 minutes before cooking and pat it very dry. Heat the oven to 375F/190C.

Mash the softened butter with the garlic, rosemary, thyme, 1 teaspoon salt, and pepper.

Gently loosen the skin over the breast with your fingers and spread half the herb butter directly on the meat. Rub the rest over the skin with the olive oil.

Put the turkey in a roasting tin, squeeze the lemon over, and drop the halves in the tin.

Roast about 1 hour 15 minutes, until the skin is golden and a thermometer in the thickest part reads 165F/74C.

If the skin browns too fast, cover it loosely with foil.

Rest the turkey, loosely tented with foil, 15 minutes before carving - this keeps it juicy.
