  • 8 oz (225 g) ground pork
  • 3 tbsp soy sauce
  • 2 tbsp Chinese sesame paste or tahini
  • 1 tbsp chili oil, plus more to taste
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1/2 cup stock or noodle water
  • 2 scallions, sliced, toasted peanuts, 1 tbsp oil

Method

Make the sauce in the bottom of two bowls: whisk the sesame paste, soy sauce, chili oil, garlic, and sugar with the hot stock until smooth and pourable.

Heat the oil in a pan over high heat and cook the ground pork, breaking it up, 5-6 minutes until browned and slightly crisp. Add a splash of soy sauce to the pork.

Cook the noodles in boiling water per the packet, saving some noodle water, then drain.

Add the hot noodles to the bowls of sauce and toss well to coat (loosen with noodle water if thick).

Top with the crispy pork, scallions, and crushed peanuts.

Add more chili oil to taste and toss everything together just before eating.
