Ingredients

  • 2 portions ramen noodles
  • 6 cups rich broth
  • 2 soft-boiled eggs
  • 2 tbsp miso or soy
  • Sliced scallions
  • 1 sheet nori
  • Bamboo shoots
  • Chili oil

Method

Bring the broth to a gentle simmer and season with miso or soy.

Cook the noodles separately, then drain well.

Divide noodles into bowls and ladle over the hot broth.

Top with halved eggs, scallions, nori, and a swirl of chili oil.
