Ingredients

  • 4 chicken pieces
  • 2 cups buttermilk
  • 2 cups flour
  • 1 tbsp paprika
  • 1 tsp cayenne
  • Oil for frying
  • 4 brioche buns
  • Salt and pepper

Method

Brine the chicken in buttermilk for at least an hour.

Dredge in seasoned flour, pressing to create craggy edges.

Fry at 350F until deep golden and cooked through.

Drain, season again, and serve on toasted buns or on its own.
