This American comfort double smash burger builds its flavor from ground beef, soft burger buns and american cheese, and comes together in about 45 minutes with medium-level technique. The method starts by mixing the sauce ingredients in a small bowl.

A 45-minute cook time that's mostly hands-off simmering or roasting.

A few technique steps to focus on, but nothing that needs special equipment.

Built around ground beef, so the flavor comes from real ingredients, not a spice packet.

Ingredients

  • 1 lb (450 g) ground beef (80/20)

  • 8 slices American cheese
  • 1/2 onion, very finely diced

Method

1

Mix the sauce ingredients in a small bowl and set aside.

2

Divide the beef into 8 loose balls - do not pack them. Keep them cold.

3

Heat a heavy pan or flat griddle over high heat until very hot.

4

Place a ball in the pan and immediately smash it flat and thin with a sturdy spatula (press hard for 10 seconds). Season with salt and pepper. Work in batches.

5

Cook 2 minutes until the edges are lacy and deep brown, then flip. The thin patty on high heat is what makes the crispy crust.

6

Lay cheese on each patty, cook 1 minute more, then stack two patties together.

7

Toast the buttered buns in the pan.

8

Build each burger with sauce, a little onion, pickles, and the double stack. Serve at once.
