Ingredients

  • 1 1/2 lb stewing meat
  • 2 carrots, chopped
  • 2 celery stalks
  • 1 onion, diced
  • 3 cups stock
  • 2 tbsp tomato paste
  • 1 cup pearl barley
  • Bay and thyme

Method

Brown the meat in batches and set aside.

Soften the vegetables, then stir in tomato paste.

Return the meat with stock and barley and simmer low and slow.

Cook until everything is meltingly tender; adjust seasoning.
