Ingredients

  • 2 lb vegetables for the base
  • 1 onion, chopped
  • 3 cloves garlic
  • 4 cups stock
  • 1/2 cup cream
  • 2 tbsp olive oil
  • Fresh herbs
  • Salt and pepper

Method

Sweat the onion and garlic in olive oil until soft.

Add the vegetables and stock and simmer until tender.

Blend until silky, then loosen with cream.

Season well and finish with herbs and a swirl of oil.
