Ingredients

  • 1 lb protein or legumes
  • 1 onion, finely diced
  • 3 cloves garlic
  • 1 tbsp grated ginger
  • 2 tbsp curry spice blend
  • 1 can crushed tomatoes
  • 1/2 cup cream or coconut milk
  • Fresh cilantro

Method

Soften the onion, then add garlic, ginger, and the spice blend.

Stir in the tomatoes and cook until the oil separates.

Add the protein or legumes and simmer until tender.
