Ingredients

  • 2 cups basmati rice
  • 1 lb chicken or vegetables
  • 1 cup yogurt
  • 2 onions, fried
  • 2 tbsp biryani masala
  • Pinch of saffron
  • Fresh mint and cilantro
  • 4 tbsp ghee

Method

Marinate the protein in spiced yogurt for at least an hour.

Par-cook the basmati with whole spices until 70 percent done.

Layer rice and curry with fried onions, mint, and saffron milk.

Cover tightly and steam on low until fragrant; fluff before serving.
