Spanakopita Mezze Board
Built around spinach and feta -- the method starts by cooking the onion in a little butter until soft.

A shareable spread of dips, olives, cheese, and warm bread for grazing. Here it's built on spinach, feta and onion -- a easy, Mediterranean recipe that starts by cooking the onion in a little butter until soft, and is ready in roughly 25 minutes.
Ready in 25 minutes -- genuinely doable on a weeknight.
An easy, forgiving method -- hard to get wrong on a first try.
Built around spinach, so the flavor comes from real ingredients, not a spice packet.
Ingredients
- 1 lb (450 g) spinach, chopped
- 1 cup feta, crumbled
- plus 5 more ingredients
Method
Cook the onion in a little butter until soft, add the spinach, and cook until wilted. Cool, then squeeze out all the excess water (wet filling makes soggy pastry).
