Ingredients

  • 4 egg whites
  • 1 cup caster sugar
  • 1 tsp cornstarch
  • 1 tsp vinegar
  • 1 1/4 cups cream
  • 2 cups fresh berries
  • 1 tsp vanilla
  • Mint to finish

Method

Whisk the egg whites, adding sugar slowly to a glossy meringue.

Fold in cornstarch and vinegar and shape into a nest.

Bake low and slow, then cool in the oven.
