Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted vegetables
  • 1/2 cup chickpeas
  • 2 cups baby greens
  • 1/4 cup tahini dressing
  • 1 avocado, sliced
  • 2 tbsp seeds
  • Lemon and salt

Method

Cook the quinoa and roast the vegetables until tender and caramelized.

Whisk the tahini dressing with lemon and a splash of water.

Build the bowl with greens, grains, chickpeas, and avocado.

Spoon over the dressing and finish with seeds and salt.
