- 1 cup roasted vegetables
- 1/2 cup chickpeas
- 2 cups baby greens
- 1/4 cup tahini dressing
- 1 avocado, sliced
- 2 tbsp seeds
- Lemon and salt
Method

Cook the quinoa and roast the vegetables until tender and caramelized.

Whisk the tahini dressing with lemon and a splash of water.
