- 1 1/2 cups Arborio rice
- 5 cups warm stock
- 1/2 cup dry white wine
- 1 shallot, minced
- 1/2 cup Parmesan
- 2 tbsp butter
- Pinch of saffron
- Sea salt
Method

Sweat the shallot in butter, then toast the rice until the edges turn translucent.

Deglaze with wine, then add warm stock a ladle at a time, stirring constantly.

Continue until the rice is creamy and just tender, about 18 minutes.

Beat in butter, Parmesan, and saffron; rest two minutes before serving.
