Ingredients

  • 1 lb squid or shrimp
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1 cup soda water
  • Oil for frying
  • 1 lemon
  • Garlic aioli
  • Sea salt

Method

Pat the seafood dry and chill the batter.

Dredge lightly, then dip in the cold soda-water batter.

Fry in small batches until pale gold and crisp.
